Devillicious Eggs

by Joan Robinett Wilson on April 25, 2011

I love devilled eggs and since I was in charge of Easter this year I made a big batch.  This is how I make devilled eggs.  I hard boil a dozen or two eggs.  Peel them.  Cut them in half the long way.  Put the yolks in a bowl and mash them up with Best Foods (or Hellmans) mayonnaise until very moist but not runny or anything.  I also add sweet pickle relish to taste.  I just spoon it in until it looks right.  Salt and pepper to taste. I then spoon the yolk mixture back into the empty bowl of the egg. I lay them out on the plate and sprinkle a little paprika on for some nice contrast. Oilla! Devilled eggs!

Snohomish, WA is where you’ll find me, architect mom, ”drafting a life”; working from home as an architect, managing my family’s lives, forgetting to clean the house, building some crazy thing or another, sometimes cooking a great meal and always packing my kids horrible lunches.
