My friend, Erika, makes the best sugar cookies ever. Period. End of story. Our oldest girls are the same age and have been together in school since kindergarten – which is when I first experienced the nirvana of her sugar cookies. Every Halloween, Christmas, Valentine’s Day, St. Patrick’s Day Erika would make these cookies with holiday appropriate color coordinated frosting. She soon realized how much I adored them and would bake extras just for me. That is a true friend….May you, too, now experience my nirvana.
Erika’s Sugar Cookie – The Best Sugar Cookie Ever
Ingredients:
- 3 cups flour
- 1 1/2 cup sugar
- 1 1/2 t. baking powder
- 1/2 t. salt
- 1 cup butter
- 3 eggs, beaten
- 1 1/2 t. vanilla
Cooking Directions:
- Sift together dry ingredients. (Note: I never sift and they come out just fine)
- Cut in butter, as for pie crust.
- Add beaten eggs and vanilla. Mix well and place in refrigerator a few hours. (I never leave in that long)
- Roll out, cut and bake at 350 degrees until set and lightly browned (about 10-12 minutes).
