Cucumber Salad

Here is the cucumber salad to go with the frighteningly delightful chicken meatballs that I have adapted from Laurie David with Kirstin Uhrenholdt’s cookbook – “The Family Dinner”.

Cucumber Salad

Ingredients:

  • 2 cucumbers (english hothouse preferred), peeled and thinly chopped
  • 1 cup seasoned rice wine vinegar or regular vinegar with a little sugar thrown in)
  • 1/4 dill, chopped (optional)

Cooking Directions:

  1. Mix everything together.
