Well, I just pulled up last year’s New Year’s Resolutions & realized I can reuse them for this year as I only accomplished two out of my sixteen resolutions; I kind of learned how to play chess and I played competitive singles tennis – not very well, but I did it. Ugh!! I’m always talking to the kids about setting goals and I’m setting a very poor goal setting example. So this year I’m going to resolve to conquer all of the rest of my unresolved resolutions!
In the meanwhile, the Super Bowl will be here before you know it and I have two new sandwich concoctions that are perfect football fare. I tweaked the Southern Living Hot Roast Beef Party Sandwich recipe to come up with a Hot Ham Party Sandwich recipe and a Hot Turkey and Cranberry Party Sandwich. So easy to make and super scrumptious – the perfect snack to eat while watching the Seattle Seahawks win the Super Bowl again!
Hot Turkey and Cranberry Party Sandwich
Ingredients:
- 2 1/4 pound deli sliced turkey, chopped in thin strips so easily sprinkled
- 15 deli sized slices provolone cheese
- (2) 14 oz. cans whole berry cranberry sauce
- 3/4 cup + a little more best foods mayonnaise
- 1/4 cup dijon mustard
- (3) 18 oz packages old fashioned while rolls, do not separate
Cooking Directions:
- Remove rolls from package, BUT DO NOT SEPARATE! Cut rolls in half horizontally, creating 1 top and 1 bottom per package.
- Spread a thin layer of mayo on cut side of roll tops and then thickly spread cranberry sauce over the mayo.
- Mix together mayonnaise and mustard. Spread mustard-mayonnaise blend on cut sides of roll bottoms.(Make more if necessary) Top with turkey and cover with cheese slices. Sprinkle with salt and pepper to taste, if desired. Cover with top halves of rolls (cranberry side down) and wrap in foil.
- Bake at 325 degrees for 20-25 minutes or until cheese is melted. Slice into individual sandwiches.
- Please note, you can make these ahead of time and freeze up to 1 month. Thaw overnight in fridge and bake as directed.

SEAHAWKS! I love your post Joan – – especially the part about our Hawks! I think I’ll try both of these for Sunday….they look really good…and nice and easy. My favorite turkey/cranberry sandwich is at Gorilla Bites down on 1st Street. It’s made like a grilled cheese sandwich – – just hits the spot, and I love the turkey/cranberry combination. Love your recipe posts Joan – – the stories, your writing style, the photos, and the recipes.
